Homemade Mini Pies (Poptarts!)


I had the craziest craving the other day for a portrait but I know that there is SO much sugar and other additives. SO, I decided to come up with my own recipe! 

HERE......WE......GO! 
Homemade Poptart

You will need: 

2 Cups Unbleached Flour 
1 TBS Baking Powder
3/4 C Milk 
1/2 C Unsalted Butter 
1/2 C Raspberries 
2 TBS Unbleached Sugar 
1 Tsp Vanilla 

1. Pour the flour, baking powder, milk, vanilla and butter into a bowl and knead it with your hands until it's firm and not sticky. 

2. Pour a little bit of flour on a clean section of your counter top and roll out the dough until it is 1/4 inch thick maybe less. 

3. Next take a biscuit cutter and cut out as many as you can until there is little to no dough left. 

4. Next, you want to prep the filling. My personal favorite are raspberries. Get a bowl and add the raspberries and the sugar. Mash them up until they look like jelly. 

5. Take one of the biscuit pieces that you cut out and add a small spoonful of the jelly to the very center. Then add another cutout on top of that. 

6. You need to seal the edges in order for the jelly not to seep out. You can do this several ways. You can use a fork and push down the edges or you can buy a Cut and Seal biscuit cutter like what I have. TOTALLY WORTH BUYING! JUST FYI! 

7. Bake in the oven on 400 degrees for 10-12 minutes. Make sure and keep an eye on them. Once they are a golden brown they are done. 

These can be frozen and pulled out whenever you or your kiddos would like to eat them! 













Here are some replacement ideas: 


Milk: Almond Milk, Coconut Milk, Cashew Milk, Rice Milk
Butter: Coconut Oil 
Sugar: Agave or a diabetic replacement like Splenda 
Flour: Coconut Flour, Wheat Flour, 
Fruits: Apple, Blueberries, Blackberries, Peaches, Pears,etc. Just follow the same jelly making process.
