Homemade Pomegranate Muffins

Homemade Pomegranate Muffins




These pomegranate muffins are something that I have always wanted to try and make. This last weekend my son and I finally had the time to make them! THEY WERE SOOOO GOOD! 



Recipe

1/2 pomegranate
2 Cups Unbleached Flour
1/2 C Sugar
1 Tablespoon Baking Powder
1 Egg
1 C Almond Milk
1/2 C Canola/Vegetable Oil
Muffin Cups
Muffin Tin

1. Preheat the oven to 425 degrees.

2. Mix the flour, sugar, and baking powder together in a bowl.

3. Next, mix the egg, oil, and almond milk in a separate bowl.

4. Add the wet mix to the dry and stir until there are no clumps of flour or baking powder left.

5. Add the pomegranate seeds.
***The trick to getting the seeds out of the pomegranate is slicing the pomegranate in half and then knocking the sides with something hard. This is the best way to avoid the pulp on the inside. ***

6. Pour the mixture evenly into each muffin cup and then put them in the oven.

7. Each oven is different so the timing will either be less or more. I would say that a good time to check the muffins is around 22 minutes. They usually take in between 20-25 minutes. Usually you can tell when they are done if they are brown on the top. But to double check that they are done on the inside is to take a skewer stick or a knife and poke it directly into the center of the muffin from the top. If it is still a wet mixture then you need to leave them in for 2-3 more minutes.
