Homemade Vegetarian Chili

Homemade Vegetarian Chili From Scratch 

1 c. Black beans                   


2 TBS Chili Powder 
1 c. Red beans                       
2 TBS Cumin
1 c. Kidney beans                 
3-4 Cloves Garlic
1 c. Great northern beans     
3 Stalks Celery
1 c. Corn
1 Medium onion
7-8 c. Water                          
2 c. Tomato Sauce
Chilies to taste                  
 Salt and pepper to taste

          ***This recipe uses dry beans***

                            
1. Throw the black, red, kidney and northern beans in to a crock pot with the 7-8 cups of water. 
2. Chop the celery and onion and add it to the crock pot. 

3. Add 2 cans of tomato sauce. 

3. Mince the garlic and let it set in a bowl for about 15 minutes. Do the same with chilies. If you don't want your chili to be really spicy then add the chilies about half way through the cooking process. If you want it to be spicy then add them at the end. 

4. When it comes to the spices you can add them at the beginning so the beans and veggies will soak them up. If you want it a little more spicy then you can add chipotle, hot sauce additional pepper,etc. 

5. If you want a mild taste of garlic add it about half way through the cooking. If you would like a stronger garlic taste add it about 20 minutes before the chili is done cooking. 

6. Cook everything together on medium heat for 4-6 hours. Keep an eye on your beans and turn them every 30 minutes so that they can cook evenly. 

***Now that you have added everything together. Make sure that you mix it all together and put the lid on. If you cook it on medium heat then your beans will cook evenly and have a really good texture. ***
