Vegetarian Shepherd's Pie!? OH YA BABY!

Last night I thought to myself "I wonder if there is such a thing as a vegetarian Shepherd's Pie." 


Turns out I MADE ONE!!! It......Was.....GOOD!!!! 

Here is my recipe:

1 large carrot chopped
1 large zucchini chopped
1 cauliflower chopped
1 shallot sliced
4 large potatoes chopped
1 14.5 oz can of vegetable broth
1 small can of tomato paste
2 cloves garlic diced
1 tsp oregano
1 tsp basil
1 tsp chipotle or chili powder (I used chipotle for spice)
2 tbs of olive oil
1 cup parmesan
Salt and pepper to taste



1. Put the mashed potatoes in a pot and cover with water. MAKE MASHED TATERS!

2.  Chop zucchini, carrot, shallot and cauliflower into a pan with 2 tbs of olive oil and saute for 5 mins. Then cover for another 6 mins to make the veggies tender.

3. In a sauce pan put the diced garlic, tomato paste, vegetable broth and all spices on a medium head. Make sure to stir so it doesn't burn.

4. Put all the vegetables into a pyrex enchilada dish or a pie dish then cover with tomato sauce.

5. Put parmesan cheese on top of the vegetables and the sauce.

6. Put the mashed taters on top and stick in the oven heated to 350 for about 20 minutes.

IT WAS SOOOOOOO GOOOOOOOD!

It wasn't like the original Shepherd's Pie but it was a close resemblance with no meat and healthier! YUMMY!!!
