Poached Eggs and Potatoes for Breakfast?

Here is another breakfast idea!
Recipe: (Should feed 3) 

4 Tbs olive oil
5 red potatoes 
1tsp Thyme 
2 Poached Eggs 
2 Green Onion 
1/4 Oz. of Cheddar cheese 
Salt and Pepper to taste 

1. Put the 4 Tbs of olive oil into a pan and heat. (I don't use Canola oil because it has more unhealthy fats. I found that out from friends then I researched it.) 

2. Add the Thyme, salt and pepper to the potatoes after they are browned. 

3. Poach 2 eggs and set on top of the potatoes on a plate. 

4. Shred some cheddar on top of the eggs and sprinkle with chopped green onion. 

5. You can also make a fresh fruit salad for the side.

YUMMY YUMMY!!!!
