WHO LOVES BLUEBERRY MUFFINS!? ....oooo....oooooo.........PICK ME!
Today, I decided that I was going to make blueberry muffins.
I found a recipe out of a book my mother-in-law gave my husband and modified it
a little bit. THEY TURNED OUT GREAT!
The Original
Recipe
2 cups unsifted flour
½ cup sugar
1 tablespoon baking powder
½ teaspoon salt
1 egg, beaten
1 cup Milk
½ cup oil or melted shortening
Preheat the oven to 425 degrees. In mixing bowl, combine
flour, sugar, baking powder and salt. Make well in the center of mixture.
Combine egg, milk and oil; add all at once to dry ingredients. Mix only until
dry ingredients are moistened. Spoon into greased muffin cups, filing 2/3 full.
Bake 220-25 minutes or until golden brown. Makes 10-12 muffins. Add berries as you see fit.
My take on
the recipe (I doubled the recipe)
4 cups unsifted flour
¼ cup honey
1/3 cup crushed flax
seed
2 tablespoon baking powder
½ teaspoon salt
2 tablespoons of all spice
2 eggs, beaten
2 cup Milk
½ cup oil or melted shortening
-Take all the dry ingredients and put them
together in one bowl.
-In another bowl take the eggs, milk, butter
and honey and mix them together with a whisk or use a kitchen aid.
-After mixing all the wet ingredients add them
to the dry and mix only until dry ingredients are moistened. Then add
blueberries. (Iadded the ones that we picked from a far last week. They are delicious!)
-I also used cupcake paper cups to pour the muffin
mix into. It worked really well.
-Before I put them into the oven I made sure to drizzle honey over the top of each one and then put them straight into the oven.
Preheat the oven to 425 degrees. Spoon into muffin
cups, filing 2/3 full. Bake 20-25 minutes or until golden brown. Makes 10-12
muffins.
