Parsley Pesto
The other day i was looking through my fridge trying to figure out what sauce/dressing I could make that would go well with my salad. I saw a bunch of parsley and it appeared to be wilting. So, I thought, "what if I could make something from the parsley that was like a pesto?" Then I made it and BAM! SOOOOO YUUUMMMYYY!!!
Recipe:
1 Whole bunch of parsley
5-6 Fairly small cloves of garlic (Depending on your taste you can put fewer in)
1/2-1 C Sunflower oil/Olive Oil/ any other kind of oil you prefer
2 Green Onion
2 Big spoonfuls of artichoke hearts (This means quartered artichoke hearts) =6-8 quarters
Splash of cider vinegar
Salt and pepper to taste
***Note: After I made this recipe I thought about looking up the differences between olive oil and Sunflower Oil and the differences are REALLY interesting. I thought the opposite. The sunflower Oil article was EXCEPTIONALLY helpful in understanding what the healthier oil alternatives are.***
